HONEY CHICKEN ARROSTICINI
Are you thinking of preparing a second of meat that is simple and delicious? Something different from the usual roast or the classic cutlet? Then take some chicken breast, a spoonful of honey, and prepare these delicious honey chicken skewers.

600 gr Chicken breast
4 tablespoon of Raw Honey
2 clove of Garlic
2 glasses of Whole Milk
1 glasses of White Wine
q.s. Extravirgin Olive Oil
- Season the meat. Divide 1 chicken breast of about 600 g or the same weight of turkey breast into 2 fillets, eliminating bone and cartilage and any fat. Cut the fillets into regular nuts about 2 cm each side. If you use turkey, always reduce the rump by 2 cm nuts. Arrange them in a bowl with 2 glasses of milk, the honey, 2 crushed and peeled cloves of garlic, 2-3 sage leaves, 1 sprig of rosemary and 1 of thyme and a minced pepper. Close the bowl with plastic wrap and leave to flavor in the refrigerator for 2-3 hours or, if you have more time, even for half a day. In this way the chicken or turkey will be tastier.
- Prepare the potatoes. Rub 2-3 yellow potatoes (about 500 g) under cold running water with a brush, so as to remove all the residues of earth and transfer them to a pot with plenty of cold water. Bring to a boil, salt and continue cooking for 35-40 minutes. Drain them, peel them while still hot and mash them in a bowl with the prongs of a fork. Season with salt and pepper and add 1/2 dl of extra virgin olive oil, working with the electric whisk, in order to obtain a well-homogeneous, soft and shiny mixture, with the consistency of a sauce.
- Cook. Drain the chicken or turkey nuts, dry them and put them on the skewers. Heat 2-3 tablespoons of oil in the pan, add the skewers and brown them on all sides for 2-3 minutes. Sprinkle with 1 glass of white wine and let it partially evaporate. Drain the skewers, add 1 tablespoon of honey to the pan, preferably chestnut and a little lemon juice and mix.
- Bring to the table. When the cooking juices have a syrupy consistency, put the skewers of meat back in the pan and cook for another 1-2 minutes, turning them over. Salt and pepper rule. Spread the mashed potatoes on the plates and add the chicken arrosticini with honey and their cooking sauce.
