Hystory of Jerk. When the Spaniards came to the New World (Caribbean) they saw Natives cooking on wood/ sticks called “Barbacoa” later called “Barbeque”. They cured meat in smoked pits seasoned with “pinienta” called “boucan” meaning cured meat . They taught the Europeans who sold it to ships and later go their name :”Buccaneers” meaning Meat curers. This was later taught to the Maroons in Boston who preserved the method and added their own seasonings that created Modern JERK!
