Balsamic Peach Pork Chops with Blue Cheese

It’s a summer meal with an imaginative atmosphere and very easy to prepare.  Serve it weeknights (or anytime) with a simple salad or side of vegetables for a relaxed summer meal.

Peach is a seasonal fruit that we can also use in the kitchen with notable flavor success, and this recipe is a clear original example of how to enjoy pork in a different way than usual.

The preparation of this dish takes about 50 minutes and is cooked with all natural ingredients, and the main protagonists of this recipe are peaches, nectarines and aromatic herbs which make it a main dish on your table.


Ingredients for 4 persons

4 Pork chops (on the bone weighing approximately 200 g each)

Blue Cheese
2 Peaches in juice
3 Sage leaves
1 tablespoon sugar
20 g butter
2 tablespoons Balsamic vinegar
3 tablespoons extra virgin olive oil
to taste salt
to taste Flour

Flour the pork chops and brown them well on both sides, adding the sage leaves, salt, sugar and balsamic vinegar, leaving to flavor for a couple of minutes.

Remove the meat from the pan and into the same pan
we lightly caramelize the peaches with a little of their juice with thyme and brown sugar to obtain a delicious sweet sauce.

Remove the peaches and return the pork chops to the pan.

Cover with a lid and cook over low heat for 4 minutes.

At the last minute, return the peach to the pan, stirring gently so as not to crush the fruit.

Finally, we toss the cooked pork chops in the fruity sauce and top everything with a tangy balsamic glaze and pieces of Blue Cheese to top it all off. 


By adding white wine during cooking, we will obtain a delicious and aromatic sauce. This variant will make the pork chops a unique dish full of flavours.
