Pasta salad can be made in a thousand variations and the one I propose today is one of my favourites, a few ingredients, cherry tomato, Taggiasca olives, tuna and mozzarella are enhanced to the maximum by the flavor of a basil, pistachio pesto .


To make a tasty and perfect INSALATA DI PASTA FREDDA:
1. Cook the pasta very al dente, removing it 1-2 minutes before the time indicated on the package.
2. To cool it, do not run it under cold water because it loses the starch and flavour, but spread it on a baking tray covered with baking paper and season it with 1-2 tablespoons of extra virgin olive oil to prevent it from “sticking”; let it cool to room temperature.
3. Prepare the sauce in a large bowl and keep it in the fridge, season the pasta shortly before serving, this way you can keep it for longer.
4. Use a short pasta shape that collects the sauce better, farfalle, fusilli but also eliche and classic penne are perfect.
