Domori follows the “bean to bar” formula or “from bean to bar”, differentiating itself from most of the chocolate artisans who buy cocoa mass from large companies and transform it. Today Domori, of which Franzoni is honorary president, produces, a few steps from Turin, Italy, chocolate bars of the highest quality starting from cocoa beans of different origins. According to the company philosophy, however, it is genetics, and not the location where the plantation is located, that decrees its quality. Therefore, only fine and aromatic cocoa is used, including especially Criollo (0.001% of all cocoa grown in the world) and Trinitario (about 8% of world production). Each single-origin supply – from selected plantations as well as in Venezuela, Peru (Apurimac), Colombia (Teyuna), Tanzania (Morogoro) and Madagascar (Sambirano) – must pass the biological analysis and then, in the form of a tablet, the opinion of the panel of expert.
