Honey Jerk Roast
Honey Jerk Hot Sauce isn’t just wonderful for making tangy Jamaican ‘Jerk’ roast , but it’s delicious used as a marinade on pork, chicken or lamb before roasting. A simple recipe that is perfect for easy entertaining or rekindling those Jamaican holiday memories
Clean the meat washing with water and vinegar.
Marinate with about 1/2 tsp salt, one onion, 3 cloves of garlic, 2 stalks of scallion, half a grated sweet pepper chopped
Add a whole bottle of Honey Jerk Sauce to the meet, cover and let soak overnight in the fridge
Place chicken and seasoning in a Pyrex dish in a preheated oven (400 degrees ), with a little oil and cover with foil
Bake covered at 350 degrees for about 30-40 minutes
Remove foil and baste with the Jerk Sauce dripping and drizzle over some honey
Bake until done. Serve with a fresh salad and baked potato
